Prep Time 15 minutes
Servings: 12 servings

Ingredients

  • 1 cup soft dates (pitted, preferably Medjool)
  • 1/2 cup nut butter (creamy peanut or almond butter)
  • 1/2 cup rolled oats
  • 1 tablespoon chia seeds
  • 1/4 cup desiccated coconut (optional, for coating or flavor)
  • 1 scoop protein powder (whey, pea, or rice protein)
  • 1 pinch fine salt
  • Optional: 1 tablespoon cocoa powder
  • Optional: 1 teaspoon vanilla extract
  • Optional: 1/2 teaspoon ground cinnamon

Method

  1. Combine the main components: Add the pitted dates, nut butter, rolled oats, protein powder, and a pinch of fine salt to a food processor.
  2. Process until a sticky consistency forms: Pulse the food processor until the contents come together and form a cohesive, pliable mass.
  3. Add flavor enhancers (optional): Incorporate any optional additions like cocoa powder, vanilla extract, or ground cinnamon. Pulse briefly to combine these elements.
  4. Shape into uniform spheres: Roll the sticky mass into small, bite-sized spheres. Aim for a consistent size for even portions.
  5. Coat the power bites (optional): Roll the formed spheres in finely shredded coconut flakes or finely chopped nuts for extra texture and flavor.
  6. Chill the finished product: Place the formed energy bites in the refrigerator for at least 30 minutes. This helps them firm up and hold their shape.
