Prep Time 10 minutes
Cook Time 7 minutes
Servings: 2 servings

Ingredients

  • 1 scoop protein powder (chocolate or unflavored)
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup milk (dairy or non-dairy)
  • Sweetener to taste (e.g., stevia, erythritol, maple syrup, honey)
  • 1 tablespoon thickening agent (e.g., cornstarch, chia seeds)
  • Pinch of salt
  • Optional: Vanilla extract
  • Optional toppings: Whipped cream, fresh berries, sliced bananas, chopped nuts, shredded coconut, granola

Method

  1. 1. Combine the dry ingredients: In a medium saucepan, whisk together the protein powder, unsweetened cocoa powder, thickening agent, and a pinch of salt until thoroughly combined.
  2. 2. Gradually add the milk: Slowly pour the milk into the dry mixture while continuously whisking to prevent lumps. Continue whisking until the mixture is smooth.
  3. 3. Heat and thicken: Place the saucepan over medium heat. Stir constantly as the mixture heats up and begins to thicken. This usually takes about 5-7 minutes. Avoid boiling.
  4. 4. Remove from heat and sweeten: Once thickened, remove the saucepan from the heat. Stir in your chosen sweetener to taste. Add vanilla extract if desired.
  5. 5. Pour and cover: Pour the warm pudding mixture into individual serving dishes. Cover each dish with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent a skin from forming.
  6. 6. Chill: Refrigerate the puddings for at least two hours, or until fully set and cold.
  7. 7. Serve: Serve cold and enjoy your delicious high protein chocolate pudding. Garnish with optional toppings if desired.
